Bin 3 Café & Cellars started in the midst of tumultuous times and against great challenges. In late 2007 and at the onset of the financial crisis, Peter signed a lease and started Bin3 retailing wine with boxes on the floor. The shop in Balwyn had been empty for four years. In spite of the grim backdrop, this was a sign of his self-confidence and perseverance in the midst of challenges.
When his son, Tom returned from London the fallout from the recession and crisis was beginning to snowball. Rather than focusing on the problems, he setup bench at the back of the store borrowing a Dom Torre’s 3 Goup La Cimbali M28 (of Don Camillos,) and began to serve coffee.
